Finding Alternatives to Comfort Foods:

Missing your favorite pasta dish? Now that winter squashes are in season, try substituting spaghetti squash for your favorite pasta! You can poke holes in it and pop it in the microwave or oven, cut in half, let it cool, and then scrape out the spaghetti-like "pasta." Mix with your favorite meat and sauce!

Missing rice? Try substituting cauliflower, which can easily be grated or put in a food processor. Cook it on the stove top with some chicken broth and seasoning! Try it with some salsa verde (Trader Joe's has a great one) and chicken or pork shoulder! Yum! (Cauliflower can also be substituted for mashed potatoes--there are plenty of recipes online!)


Missing your favorite lasagna dish? Try slicing thin cuts of zucchini and layering with ground beef or turkey, marinara sauce (make your own or find one with olive oil and minimal sugar content), olives, peppers, onions, tomato, etc. Bake it in the oven for a delicious dinner!
